Best thing about Pongal is that it can be made sweet or savoury, which is best for both worlds. Pongal is a Tamil new year festival and is celebrated by the cooking of new rice. The savoury rice is cooked with various herbs and spices.

This four-day festival honours Lord Sun. It also signifies the end of winter. Pongal is considered to be an ancient celebration. It was originally a Dravidian harvest festival but finds mention in Sanskrit Puranas too.

  • Rice
  • Moong lentil
  • Spices and herbs
  • Ghee
  • Cashews
Best Pongal Recipe: Steps to make the recipe
  • Heat a small pan and add ¼ cup of moong dal to it
  • Roast the moong dal until it becomes aromatic
  • Transfer the roasted moong dal into another bowl
  • Add ½ cup rice in the bowl containing the roasted moong dal
  • Rinse both the rice and the roasted moong dal a couple of times with water
  • Drain well and add them to a pressure cooker
  • Now add ½ teaspoon cumin seeds
  • Add 1/8 teaspoon asafoetida (hing)
  • 1 teaspoon chopped ginger
  • Add salt
  • Pour 3 to 3.25 cups of water
  • Pressure cook on a medium heat
  • Once they are done, let them settle down
  • In another small pan, heat 2 to 3 tablespoons ghee
  • Add 1 teaspoon cumin seeds
  • Let them splutter
  • Add 10 to 12 cashews and fry
  • Now add 1 teaspoon black pepper
  • 10-12 curry leaves
  • Stir well
  • Now pour it on the cooked rice and lentils
  • Mix thoroughly
  • And it’s done
